Back to School: 5 Easy and Convenient Family Dinners
September means back-to-school and if you’re like most families, the transition back to school after a relaxing summer can feel a little hectic. As the household gets back into a more regular routine and kids are adjusting to new teachers, classes and, in some cases, new schools, this time of year can be a little stressful. One stress you don’t need is trying to figure out what’s for dinner as your household is getting back to school, so here at STONEFIRE Grill, we’d like to help make the transition a little easier.
Here are three quick and easy recipes that are sure to please the entire family.
Cheesy Taco Lasagna
Total time: 0:55 Prep: 0:25 Level: easy Serves: 8
- 1 lb. ground beef
- 1 tbsp. Taco Seasoning
- 1 box no-boil lasagna noodles or cooked lasagna noodles
- 3 c. Favorite Salsa
- 2-15oz. tubs of ricotta
- 1/4c sour cream
- 1 large egg
- 3 c. shredded Mexican Cheese
Sliced scallions and red jalapeño for garnish
Preheat oven to 350 degrees. In a large skillet over medium heat, add ground beef. Season with taco seasoning and cook.
In 9×13 baking dish spoon a layer of salsa over bottom to cover. Layer lasagna noodles. In a medium bowl, mix ricotta, sour cream and egg and season with salt. Spread ricotta mixture over noodles and top with a layer of ground beef and cheese. Repeat layers and top with cheese. Cover with foil and bake 30-35 minutes. Let cool 10 minutes, garnish with scallions and jalapeño.
Baked Chicken Fingers with Honey Mustard Dipping Sauce
Total Time: 25 Prep: 15 Level: easy Serves: 4
- 1 lb. boneless/skinless chicken cutlets
- 1 1/2c panko crumbs
- 1 tbsp. lemon zest
- 1 tbsp. fresh thyme leaves
- Kosher salt
- Black pepper
- 2 large eggs, beaten
- 1/4c. whole-grain Dijon mustard
- 2 tbsp. honey
- 6 c. mixed greens
Preheat oven to 425 degrees and line a baking sheet with foil. Cut chicken cutlets into 1 ½”strips. In shallow baking dish, combine panko, lemon zest and thyme; season generously with salt and pepper. Dip chicken strips one by one in eggs, then bread crumb mixture, pressing lightly to make sure crumbs adhere and place on baking sheet. Bake until golden, 10-12 minutes. Increase heat to broil, then cook til crisp, 1-2 minutes.
In a small bowl, whisk together mustard and honey. In a large bowl, toss mixed greens with lemon juice and olive oil. Season with salt and pepper.
- 1 lb. ground beef
- 1 can cream of mushroom soup
- 1 can tomato soup
- 1 can whole kernel corn, drained
- 2 tsp. chili powder
- 1 onion, chopped
- 1 1/2 c. macaroni noodles, cooked and drained
- Grated cheddar cheese, enough to cover casserole
Preheat oven to 350. Cook macaroni according to directions on package. Brown ground beef and onion Add chili powder and salt and pepper to taste. Mix the cream soups and corn together, add to cooked hamburger. Add macaroni, mix well. Put in 9×13 baking dish. Bake 35-40 minutes. Cover with grated cheese for the last 15 minutes.
